Both loved and hated for its vinegary and carbonated taste, kombucha is much more than just a trendy drink. It originated in northeast China around 2200 years ago, and has been prized for its health benefits ever since. It’s created when a SCOBY, or symbiotic culture of bacteria and yeast, is placed in sweetened tea mixture, and left for a few weeks to ferment.
