<h3>Chef Jeff Lefko&#8217;s Recipes:</h3>
<p>Gouda Macaroni and Cheese</p>
<p>Calvtappi pasta<br />
Olive oil (enough to coast bottom of saute pan)<br />
1/4 c. minced onion<br />
equal amounts of Gouda, Cheddar, and Fontina cheese<br />
Heavy whipping cream (use judgement)<br />
Half and Half (use judgement)<br />
1 T. Cream cheese<br />
2 handfuls Panko Breadcrumbs<br />
Parm. cheese<br />
Melted butter<br />
S and P</p>
<p>Bruschetta</p>
<p>For the tomato mixture</p>
<p>4 roma/heirloom tomatoes<br />
1/4 minced red onion<br />
1.5 T. Basil<br />
Balsamic Vin.<br />
Olive oil (3 times the amount of oil as vinegar)<br />
S and P<br />
Red pepper flakes<br />
black olives (optional)</p>
<p>Cut tomatoes, onion, and Basil to the desired size. Mix in the vin and olive oil. Season.</p>
<p>For the crostini<br />
Baguette<br />
Room temp. butter<br />
Garlic<br />
Parsley (desired amount)</p>
<p>Mince garlic, and chop parsley. Cut the baguette into thin cracker-like pieces. Mix the butter with the minced, fresh garlic, and the chopped parsley. Bake until golden brown.</p>
<p>Assemble, and enjoy.</p>

<p><strong>Poached Eggs</strong></p>
<p>4 eggs</p>
<p>Directions</p>
<ol>
<li>Fill water ½-3/4 way full in your LARGE saucepan</li>
<li>Cook on 6, when water begins to bubble turn down to a 4</li>
<li>Stir spoon clockwise until a funnel starts to form</li>
<li>Crack 1 egg onto a plate</li>
<li>Pour egg into the center of the funnel in the water</li>
<li>Do not TOUCH or STIR water anymore!!!!</li>
<li>Let it sit for about 2-3 minutes</li>
<li>Spoon out with slotted spoon</li>
<li>Place onto plate</li>
</ol>
<p>10.  REPEAT</p>
<p><strong>Hollandaise Sauce</strong></p>
<p>1 1/3 cup unsalted butter</p>
<p>2 large egg yolks</p>
<p>2 tablespoons cold water</p>
<p>1 tablespoon strained freshly squeezed lemon juice, plus more as needed</p>
<p>1 teaspoon kosher salt</p>
<p>1 drop Worcestershire sauce</p>
<p>white pepper or a pinch of cayenne pepper</p>
<ol>
<li>In a medium pan, completely melt the butter over medium-low heat</li>
<li>Remove from the heat and set it aside for 5 minutes. Skim and discard the white foam that rises to the surface of the butter</li>
<li>Pour the clear golden butter into a liquid measuring cup. DO NOT add the milky solids and watery liquid at the bottom of the saucepan</li>
<li>Fill small sauce pan 2 inches deep. Bring to a gentle simmer on a level 6.</li>
