Dark Chocolate Truffles

Today my whole entire family was bitten by the sleepy bug. The only cure was caffeine..or chocolate. That being said, my day has consisted of a warm bath, a sit by the fire, and some time in the kitchen..making truffles.

This recipe is the simplest, most original dark chocolate truffle recipe. It is adapted from Whole Living Magazine.

8 oz dark chocolate

1/4 cup coconut oil

3 Tbs water

1 tsp vanilla extract

pinch of salt

cocoa powder (for outside covering)

Preparation

Melt chocolate, coconut oil, and water together in a saucepan over medium-low heat. Once mixture is melted, transfer to an 8-inch baking pan and place in the refrigerator for about 2 hours (or until the mixture has hardened to a malleable consistency). Take out of fridge and roll spoonfuls of mixture into balls and cover with cocoa powder.
